Chocolate chip cookies that keep pace with the times-lifestyle-Akron Beacon Journal

When the snacks you crave may start with “chocolate” and end with “biscuits,” maintaining healthy eating habits during stressful times can be difficult.
Chef Nicole Burgess provided some help through her recipe for the National Chocolate Chip Cookie Day observed on August 4. Burgess is the pastry chef of the pastry chefs at Pechanga Resort Casino in Temecula, California. They hope to prepare recipes for those who might get rid of this situation, called quarantine weights.
Burgess said: “I originally made these’healthy’ chocolate cookies by accident at home,” Burgess decided to use almond flour instead when she couldn’t eat regular flour every day. The almond flour version has lower carbohydrate content and higher healthy fat and fiber content, which is surprising.
She said that comparing the new version with the original version, “they have the same taste for me.” “So, I included it in the special event we baked in Pechanga before the COVID-19 pandemic, and added more and more healthy alternatives to make them healthier.
“So far, we have received great feedback!” Burgess added. “Personally, I like them. They have the same decadent biscuits taste, but they have no inner feeling. Now, many people are struggling to close the gym, and now it is the most so-called “diet biscuits”. Good time.”
She said that although these cookies are not on Pechanga’s regular menu, they have been used for special events.
“Usually, we receive requests for specific dietary restrictions-low-carb, vegan, keto, etc., and we can almost always accommodate them. As far as I know, guests who participate in special events say that they taste the same as regular biscuits, The calorie-rich and fat-rich biscuits have exactly the same taste-but there is no guilt.”
Add the wet and dry mixture together and stir until all the dry mixture is absorbed. If using an electric mixer, mix well to mix everything (about 2 minutes). Stir in the chocolate chips. Remember not to over mix the cookie dough.
Cooking instructions: If you want the biscuits to be crisper, you can put them in the oven for another minute or two. Check every minute to make sure you don’t burn them eventually. If you like this sticky, chewy cookie, always use the smaller recommended time.
Precautions for storage: The baked biscuits can be stored frozen. If the preparation time is insufficient, Burgess said, it is best to freeze the cookie dough balls and bake them when needed.
